In a mixing bowl add in your softened butter, brown sugar and regular sugar, and your pudding mix. I usually lay my butter out ahead of baking to it can often. It makes mixing this together, much easier. I use a wooden spoon to mix this up, but you can use a hand mixer.
Next you want to mix in your eggs, mix in each egg one at a time, beating them in well.
Next you will add in your vanilla
Now mix in your flour, and baking soda.
Once this is mixed in evenly, add in your chocolate chips.
Bake at 350' degrees for roughly 7-8 mins. The trick is to make sure the dough balls aren't too thick. You want to pull them out when the bottom of the cookie is light brown. The middle will be a little loose when you pull it out, but it will be perfect once it sits for a few mins and cools.
Tips!
Use butter to rub on your cookie sheet and keep the cookies from sticking, each batch.
Use the same cookie sheet, and always reapply the butter to the pan. Your first batch may take 8-9mins since the pan hasn't warmed up yet.
Never leave your cookies on the sheet, always pull them off and spread them out to cool.
Lastly trust the process. You will think the cookies need a little more time when you pull them off, but I promise they will keep cooking outside the oven and be perfect! This is the trick for CHEWY cookies!
